Chilled “Blueberry Hill” Soup

Ingredients

  • 4 cups fresh blueberries
  • 2 tablespoons honey
  • 2 teaspoons lemon juice
  • 1 teaspoon cinnamon
  • 2 teaspoons cornstarch
  • 1 teaspoon lemon zest
  • Whipped Cream or Yogurt

Instructions

1. Combine the berries with the honey, lemon juice, cinnamon and a cup of water. Bring
to a gentle boil, then turn down to a low simmer, cover and cook 8-10
minutes or until the berries are stewed.
2. Strain the berries & put juice back in the pot. Stir the cornstarch until well blended. Bring back to a very
gentle boil and cook, stirring, until soup starts to thicken, about 2 minutes.
3. Remove from the heat and stir in the lemon zest.
4. Serve warm, or chill and serve later. Top with a scoop of yogurt before serving or if you prefer to make this a dessert top with fresh whipped cream.
