Makes: 1 1/2 cups
1. Place all ingredients in a blender and puree until smooth. Set aside.
2 to 3 tablespoons Olive oil
2 pounds (32 to 36) shrimp, peeled and deveined
1 1/2 cups Orange Chipotle Honey-Mustard Sauce
1. Heat Olive oil in a large, heavy skillet over medium-high heat. Add one quarter of the shrimp and sauté until just cooked through, about 2 to 3 minutes. Continue adding shrimp until all the shrimp have been cooked.
2. Place the cooked shrimp in a large bowl and pour the sauce over them. Toss to combine well and serve warm. Serve shrimp as an appetizer with a baguette or over rice/ pasta as an entrée.
