Honey Chipotle Sauce

Chipotle Honey Mustard Sauce

  • 1 6-ounce can frozen orange juice concentrate, thawed
  • 3 tablespoons chipotle chilies and juice from a 7-ounce can of Chipotle Chiles in Adobe Sauce
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon minced garlic
  • 1/3 cup coarsely chopped fresh cilantro, packed
  • 2 tablespoons fresh lime or lemon juice
  • 1/3 teaspoon salt or to taste
  • 2 to 3 tablespoons Olive oil

Makes: 1 1/2 cups

1. Place all ingredients in a blender and puree until smooth. Set aside.

Shrimp

2 to 3 tablespoons Olive oil
2 pounds (32 to 36) shrimp, peeled and deveined
1 1/2 cups Orange Chipotle Honey-Mustard Sauce

Directions:

1. Heat Olive oil in a large, heavy skillet over medium-high heat. Add one quarter of the shrimp and sauté until just cooked through, about 2 to 3 minutes. Continue adding shrimp until all the shrimp have been cooked.

2. Place the cooked shrimp in a large bowl and pour the sauce over them. Toss to combine well and serve warm. Serve shrimp as an appetizer with a baguette or over rice/ pasta as an entrée.
