Frittata
4 Tablespoons Extra Virgin Olive oil
1 Cup Onions, Chopped
4 Spicy Italian Sausages, Casing Removed
1 Cup Mushrooms, Sliced
2 Red or Orange Bell Peppers, Roasted
12 Large Organic Eggs
1/2 Cup Heavy Whipping Cream
1/4 Cup Parmesan Cheese
Salt
Freshly Ground Pepper
Preheat oven to 350 degrees. Butter large baking pan. Set aside.
In a large sauté pan add olive oil & heat for one minute. Add onions to pan and sauté until they are golden brown. Now add sausage & continue to sauté until meat is cooked. This should take about 10 minutes. Stir continually. Add in the mushrooms & roasted bell peppers and cook until all vegetables are heated about 10 minutes.
In a large bowl, whisk together eggs, cream & Parmesan cheese. Add salt & pepper.
Take mixture from sauté pan & pour into bowl. Mix together. Pour mixture into baking pan. Bake until the eggs are golden brown & the frittata pulls away from the sides slightly, about 35 minutes.
Remove the frittata from oven and let cool about 10 minutes. Serve with an organic green salad.
